I have at least 6 blog posts to get up and scheduled tonight, I’m way behind and have tons to share! Here is a quick shot from a week ago when we celebrated Joe’s birthday. It was the first time I’ve ever made a homemade ice cream cake but it seemed to work pretty well! I used a whole package of peanut butter Oreos with a bit of melted butter for the crust and then on top of the crust was a layer of hot fudge, then a lay of vanilla ice cream, a layer of mashed up Reece’s Peanut Butter Cups, another layer of vanilla ice cream and then the frosting was a jar of peanut butter whipped into two cannisters worth of whipped cream with more hot fudge on top. Clearly not a Weight Watchers-approved sort of cake… it might even take the cake compared to calories in a Dairy Queen Cake, but it was tasty!
