Venison with Arugula Salad and Homemade Vinaigrette


Tonight for supper Joe cooked us a venison loin for supper, I believe he used sous vide for it but I’m not entirely certain since I wasn’t in the kitchen for most of it.  However he cooked it, it was good.  We don’t hunt but Joe’s boss does and he gave us some of the meat from his deer this year.  Normally I don’t love venison, but this meat was super good! Maybe it was just how Joe cooked it 🙂

Underneath our salad was some sort of beet sauce, I can’t remember the technical fancy term for it, and then there was arugula with homemade vinaigrette, venison, shitake mushrooms and blood oranges on top and then fried slices of parsnip on the side.  My venison was significantly more done than Joe’s was… he knows I like my meat done done so he sliced it and then cooked some extra for me so I would eat it…and it was good!
