Enchiladas for supper tonight! It’s been a long time since I tried to make them. I don’t make the best of them, but they were good enough. I cooked a beef roast in the crock pot all day to make shredded beef and then decided at the last minute to mix it with black beans and seasoning and make enchiladas out of them. I’ll never pass up an opportunity to eat Mexican food!
We had them with some lettuce underneath and then sour cream, green onions and some extra enchilada sauce on the side for dipping. Not the most Christmasy meal but it had some red and green in it I guess. This holiday season we haven’t done any seasonal meals really… just easy food!
