Tapioca


A long time ago I bought a little box of tapioca for a spaghetti sauce recipe but then we never used the rest of it until last week Joe found it and thought we should have some tapioca pudding.  I’ve made it plain/vanilla twice now and I think I could probably try some of the other flavours too since it is super easy to make for dessert.

Conveniently the recipe calls for eggs and whole milk… which we always have on hand and available! I think you can use other milk but the box says it works best with whole so whole milk it is!

The recipe is very simple… this one is from the box of Minute brand tapioca so if you buy that brand you will have the same recipe and I’m sure other brands will have pudding recipes on their box too.  Online then there are plenty of flavoured/varied recipes for tapioca pudding like one I saw that mentioned coconut… that might be good.  I haven’t tried anything fancy yet.

Ingredients:

  • 3 Tablespoons tapioca
  • 1 egg, beaten
  • 2 3/4 cup whole milk
  • 1/3 cup sugar
  • 1 tsp.vanilla
  1. Mix everything, except the vanilla, together and let it stand alone for 5 minutes
  2. Then heat the mixture in a pan on medium heat, stirring constantly, until it comes to a full boil and won’t stop even when you stir.
  3. Turn the heat off, stir in the vanilla and put it into the fridge for at least 20 minutes before serving… if you want warm pudding 20 minutes works otherwise it will have to sit in the fridge longer for cold pudding.

Easy!
