Joe wanted some Caprese salad this evening so after he got home from work we went out and picked up some fresh mozzarella, tomatoes and balsamic vinegar and then used our own olive oil and basil from our CSA share. Eventually we could make this from almost entirely local things once we begin getting tomatoes from our CSA (or if we had grown them ourselves this year but we didn’t) and once we can make mozzarella ourselves too. I doubt we’ll ever make our own olive oil! 🙂 Today our cheese came from Wisconsin and our tomatoes from Iowa so they are still closer than some of our foods! I’m not sure where the olive oil or balsamic comes from but I do know that our balsamic vinegar was aged for 10 years which seems like such a long time.
All it is is tomato and mozzarella slices with fresh basil leaves drizzled in olive oil and balsamic. I was supposed to reduce the balsamic vinegar to make it more of a glaze but didn’t realize it so that is why you can hardly tell it is on there… because I didn’t do it right! Next time I’ll simmer it for awhile to make it thicker and then drizzle it on there like I’m supposed to.
