Joe’s Miso Soup

Today was a normal day for both of us and Joe’s clients went home so we got to eat supper together, at a reasonable hour, for the first time in a few days.  I didn’t want to cook much and Joe figured out how to make some tasty miso soup earlier so we agreed on miso soup and frozen pizza for supper and it was very good!

Joe’s Miso Soup

  • 4 cups of water
  • 1 tablespoon red miso
  • 1/2 teaspoon sriracha
  • 2 teaspoonsful bonito (fish stock powder)
  • 1 cup egg noodles
  • 1 sheet of toasted nori seawood, broken into pieces

Conveniently, I am reading a book about super foods right now and both miso and seaweed were listed! How exciting is that :-)   If we had tofu I would have wanted to put some of that in too, at least in mine anyways if Joe didn’t want it, but it is rare that we ever have tofu around and the soup is just as good without it! Now that I’m thinking about it, mushrooms would be tasty too! This soup is incredibly quick and easy to make for nights when we’re tired or don’t want to cook or when we’re late getting home etc. and much healthier than Taco Bell!

We got all of our ingredients locally here so they should be easy for anyone else to find too! I can’t remember where the less common ones came from like the seaweed and fish stock but I’m pretty sure they are at normal grocery stores.
